For Ice Cream

1 punnet of hulled strawberries, must slice lengthways
1 teaspoon of finely grated orange rind
2 tablespoons of icing sugar
1 tablespoon of fresh orange juice
240g of raspberries
400mL of vanilla ice cream (must be 98% fat-free)

For Puffs

3 pieces of egg whites
2 pieces of eggs at a room temperature
1 cup of sifted plain flour
2 tablespoons of butter
1 cup of water

You must preheat the oven up to 2200C. With the baking tray with a nonstick baking paper, make the puffs first: You must beat egg whites and eggs in the jug then set it aside. In a saucepan, put the butter and the water and stir it until the butter melts. With the use of the wooden spoon, add the flour to the butter mixture and stir it for a minute. After you removed the mixture from the heat, press the mixture and set it aside for five minutes.

After, beat the whisked egg and add it to the mixture until it became glossy and smooth. Then, put 12 dessertspoonful of choux mixture in the baking tray, sprinkle the mixture with a bit of water and put it on the oven, reducing the temperature of the oven to 2000C. Bake it until the puff’s golden brown. After it was cooked, let it cool for a couple of minutes.

Afterward, make a puree by blending the icing sugar, orange juice, orange rind, and raspberries. After, when all these things are blended, put it into a bowl together with the strawberries to combine. When served, you must cut the puff into half then untangle the pastry dough inside it. Fill it up with the ice cream puree then put it in the bowl and cool down the ice cream in the latest side-by-side refrigerators in the market. To serve, put the berry mixture on the top of the cream puff.
